So the past week has been a total write off as far as cooking goes. I honestly can’t remember what I cooked this week or if I even cooked at all. So I decided when Saturday rolled around and we had a babysitter for the night ( my Mom ) that I would take advantage of the few extra hours I had before we went out to cook us up a hot and cozy stick to your bones kinda meal. It was also the perfect base to coat our tummies before we headed out for our first christmas party of the year! ….waking up this morning after consuming a bottle of wine the night before, I’m not sure how much it actually helped. Nonetheless it’s absolutely delicious and I highly recommend the next time you are looking for a cozy dish that you give it a try.
For the peppers:
Preheat oven to 450 and make sure you have the rack in the middle of the oven. Chop the peppers in large slices and coat with canola oil or you can use olive oil but I find it smokes more. Season well with salt and freshly ground black pepper. Roast until tender when pierced with a knife, about 15-20 min.
For the polenta:
Bring the milk/water to a boil in a large saucepan and add a pinch of salt. Stirring constantly, pour in the polenta and parmesan. Turn the heat to low. Simmer partially covered, stirring every few minutes until the polenta is very thick.
For the spinach:
Bring a large pot of heavily salted water to a boil. Add the spinach and cook until wilted, about 3 min. Drain and chop. Now in a large frying pan heat oil over medium heat. Add the chopped onion and cook until translucent. Add the chopped garlic and cook for one min. Add the spinach and turn to coat. Season with salt and pepper.
How to serve:
In a bowl add the polenta. Layer with spinach and peppers. Top with a fried egg and a drizzle of your fave hot sauce.
YIELD: 4 servings
- 5 large peppers ( I used red,yellow and orange peppers )
- oil
- 1/2 cup parmesan cheese
- 1 cup corn grits ( polenta )
- 2 cups water
- 2 cups milk
- 6-8 cups fresh baby spinach
- 2 cloves garlic, minced
- 1 large cooking onion, chopped
- 4 eggs,fried
- salt and pepper to taste
