So today is a lazy day. It’s cold and rainy and Poppy is fighting her first cold..poor baby. Because it’s a lazy day I decided to make a warm and satisfying pot of stew. Also because I am lazy I did not take quite as many pics documenting this process. I’m sorry but as you will see it is super easy. This is one of those stews that can be made with pretty much whatever you have on hand and can be seasoned to match.
- 2 cans of Lentils ( I used 3 cans for a huge batch of stew )
- 1 large can of diced tomatoes
- 4 cups of broth or water ( I used about 10 cups )
- 1 small bunch of carrots
- 2 small onions ( I used 2 med Onions )
- 3 cloves of garlic
- 3 cups of kale ( I used one bag of frozen Kale )
- 1 tsp of smoked paprika
- 1 tsp of chipotle chilli powder ( use as much or as little of whatever seasoning you like )
- salt and pepper to taste
- In a large pot sauté Carrots,sweet potato and onion.sweat them for about 7 min then add the chopped garlic and stir for another min or so.
- Add the tomatoes.Lentils and broth.
- Bring to a boil then reduce heat to med-low cover and simmer for 30 min- 1 hour.
- Add seasoning and simmer for a few more min.
- Add Kale and stir for another minute( if you are using frozen Kale as I did then you will bring stew back to a boil, add kale turn heat to med and stir for about 5 min )
- Enjoy!
Variations
When serving try:
- Serve stew topped with a fried egg and a drizzle of your fave hot sauce
- drizzle with balsamic vinegar
- drizzle with hot sauce
- top with a spoon full of yogurt
